HOMEMADE PICO DE GALLO
Serve as a condiment with Cajun Quesadillas, tacos and other Southwest or Mexican dishes.
2 medium tomatoes, diced small
1 fresh jalapeño, minced
1 lime, juiced
1 small red onion, chopped
1/2 bunch fresh cilantro, chopped
salt & pepper, to taste
Combine ingredients in glass or metal bowl and refrigerate.
